Recipe: Phirni
Phirni is a wonderful, creamy dessert made with ground rice combined with milk, cream, sugar and some saffron strands for flavouring. This superb dessert also tastes great when flavoured with saffron (kesar) or rose essence. The key to a good phirni is to grind the rice well. The phirni is a common preparation in most punjabi households and is traditionally served in earthenware bowls called ‘shikoras’. These are popularly known as ‘matki phirnis’ and are served at most punjabi restaurants and functions.
Ingredients:
2 Liter milk
100 gms Soaked rice
1/2 Cup sugar
1/2 tsp Cardamom powder
1/2 Cup pistachios
Soaked saffron strands
How to make Phirni
Grind soaked rice to make a paste.
Boil the milk.
Add sugar and rice paste to the boiled milk.
Allow it cool down till it gets a thick texture.
Mix cardamom powder and saffron.
Stir it for a while.
Place it in a plate and store it in the refrigerator.
Serve it chilled garnished with pistachio nuts
