Matthe Recipe
Matthe is a traditionally cooked recipe on festivals in west Uttar Pradesh. They seem similar to paranthas in terms of size. Crispy, soft Mattha fried on a low flame is prepare in 3 different flavors : Namkeen Matthe, Plain Matthe and Sweet Matthe. It is also a tradition to make Mattha on the occasion of Karva Chauth.
All 3 types of Mattha is used as a sign of goodluck in marriages and a basket full of Mattha is kept with the newly wed which will be offered to the groom's family. You can make these at once and use it for 2-3 weeks, Let us make Mattha for this Karwa Chauth.
Ingredients required for Namkeen(salty) Matthe :
- Flour(maida) - 200 grams
- Ghee - 50 grams
- Salt - 1/4 tsp
- Ajjwain(carom seeds) - 1/4 tsp
- Oil/Ghee - to fry
Procedure for Namkeen Matthe -
- Filter flour and keep in a utensil, put salt, Ajjwain, Ghee in flour and mix properly.
- With the help of water knead a hard dough. Cover dough for 15 minutes and keep aside for 15 minutes. Now press the dough and break 2 balls from it.
- Roll 1 ball into a 6-7 diameter Puri. Make tiny round holes in a line as shown in the picture(with a fork) so that it is cooked properly from the inside too and does not get puffy like a Puri. Make holes on the other side of the rolled Puri as well.
- Pour oil in a frying pan(kadhai) and heat, put Mathha's in hot oil. Fry on a low flame as you overturn them regularly till they turn brown then take them out. Prepare 2 Mattha's in this manner by frying in oil(Mattha has to be fried on a low flame and this takes 7-8 minutes). Our Namkeen Matthe is ready.
- Ingredients required for Plain Matthe :
- Flour(maida) - 200 grams
- Ghee - 50 grams
- Ghee - to fry
Procedure to make Plain Mattha :

Procedure to make Sweet Mattha
- We have to make Plain Mattha first to make Sweet Mattha. We have ready made Plain Mattha so now we will make them sweet. This requires sugar, for 2 Plain Mattha we need Sugar - 200 grams
- Put sugar in a utensil, mix 1/3 cup water to it and heat it. Stir with a spoon at regular intervals. 3-4 minutes after sugar is dissolved and water comes to boil our Chashni will be ready.(to test Chashni put 1 drop in a plate, Chashni should look like a drop. Or you can put it between the thumb and index finger then try to stick it. You will see Chashni sticks tom the fingers and a thread like substance appears). Turn off the gas.
- Put the ready made Plain Mattha in this Chashni and keep them on a plate to dry. Sweet Matthe is ready after Chashni dries up. Fill these Matthe in an air tight container for a month. Take out Mattha whenever you want and eat.
